    Siphoned Coffee Experience at the Starbucks Reserve Roastery

    Seattle's Starbucks Reserve Roastery has one of the most unique coffee tasting experiences I have ever had. Step right up to their Starbucks Experience Bar and order yourself a siphoned coffee tasting with their specialty Starbucks Reserve coffee beans - then hold on because you are in for a treat!

    After thumbing through the Starbucks Experience Bar menu, we decided to try three different Starbucks Reserve coffee varieties. There were quite a few origins to choose from but we settled on Reserve beans from Kenya, Brazil, and Columbia. After placing our order, our barista started setting up the coffee siphons right in front of us at the bar! While watching our coffee brew, we felt like we were part of an Alton Brown culinary experiment and were absolutely mesmerized.

    Starting from the lightest Kenyan brew to the boldest Colombian roast, we finished each cup of coffee before moving on to the next cup. The Kenya Barichu had a clean and light sip with citrus flavors, while the Sun-Dried Brazil Vale Verde Estate touted a deeper, sweet molasses flavor. My favorite was the final Colombia Matambo Woods coffee, which had a deep brown sugar richness.

    Starting the siphoned coffee experience, we first tried each coffee black, focusing on each flavor nuance. I then added a splash of milk to the coffee (my usual coffee addition) and I felt like it helped the flavors come alive! We also appreciated having a sparkling water accompany our siphoned coffee flight because it was a great pallet cleanser between sips.

    How a Coffee Siphon Works

    Also known as a vacuum coffee maker, a coffee siphon works by heating ground coffee and water together in a chamber that gets force filtered through heat induced vapor pressure.

    STEP 1: Pressure is created through a heat source causing water to slowly come to a boil. When the water begins to boil, the water is forced to travel from the lower water chamber into the top chamber where it mixes with ground coffee beans.

    STEP 2: After the coffee grounds and water have boiled and steeped for about 5-8 minutes (kind of like a french press) the water in the top chamber then looses its pressure, forcing the water to come back down to the bottom chamber.

    STEP 3: On its way down, the water and ground coffee beans get forced through a middle chamber filter, separating the beans from the water and creating one epic cup of coffee.

    While the Starbucks Reserve Roastery is hardly a Seattle secret, their Starbucks siphon experience is one of the most unique coffee tastings I've ever had! I've tried siphoned tea before but getting to taste three different siphoned coffees in their chique copper roasting room was absolutely magical. We were lucky to be there on a Friday afternoon in February, so it was not too busy but they said this location is usually packed on the weekends and during the summer. If you are in the area, you must stop by and hopefully you will have the same Starbucks siphon experience we did!

    After sharing my Everything but the Bagel Chickpea Toppers recipe, I can't seem to get enough of this tasty seasoning!     Everything But the Bagel Chickpeas

    Looking for more ways to use your Everything but the Bagel Seasoning? I've got a simple recipe that'll be your new favorite snacking sidekick! This recipe has three easy steps and adds extra protein and pops of flavor to any salad or avocado toast.

    In case you were wondering .. what's in the Everything but the Bagel Seasoning? Getting its name from the 'everything bagel' this seasoning mix is full of toasty flavors like sesame seeds, sea salt, dried garlic, dried onion, black sesame seeds, and poppy seeds. When baked, these ingredients come to life with the most savory of smells!

    DIETITIAN'S TIP: We all know we should be eating more beans because they are full of fiber and protein but the issue I run into is that .. beans can get boring! Avoid the bean burnout by adding new flavors and crunchy textures to your beans, like with this easy recipe.

    ⏱ Make this recipe in 3 easy steps

    STEP 1: Drain and rinse your canned chickpeas, then pat dry with a paper towel. In a bowl, coat the chickpeas in canola oil, then transfer chickpeas to a ziplock bag.

    STEP 2: Mix chickpeas, Everything but the Bagel Seasoning, and panko crumbs in a sealed ziplock bag until well combined.

    STEP 3: Spread seasoned chickpeas onto a baking sheet and bake at 350ºF for 20-25 minutes.

    CHEF'S TIP: Chickpeas don't have a ton of flavor, which makes them the perfect ingredient to doll up with something bold. You can easily swap the seasoning for something like Montreal Steak Seasoning or Powdered Ranch Dressing Seasoning.

    Ingredients

    Scale

    1 can (15 oz) of low-sodium garbanzo beans, drained and rinsed

    ⅛ cup canola oil

    3 tablespoons Everything but the Bagel Seasoning

    2 tablespoons panko crumbs

    Instructions

    1. Preheat oven to 350ºF
    2. Using a paper towel, pat dry the rinsed chickpeas (See Note 1 & 2).
    3. In a small bowl, coat the chickpeas in canola oil. Using a fork or slotted spoon transfer the chickpeas to a ziplock bag, letting the excess oil drain back into the bowl when transferring.
    4. Mix the chickpeas, Everything But the Bagel Seasoning, and panko crumbs in the sealed ziplock bag until well combined.
    5. Spread seasoned chickpeas onto a foil-lined baking sheet and bake for 20-25 minutes. Enjoy warm or cooled!

    The equipment and ingredients listed above are Amazon affiliate links. These are the exact brands I used for this recipe and always use in my own kitchen.

    NOTE 1: Having a dry chickpea is essential for the oil and seasoning to stick. Use several paper towels and make sure the chickpeas are fully dry before moving on to the next step.

    NOTE 2: When rubbing the chickpeas, this action might loosen or remove some of the chickpea skins. Do not discard them! When coated in the seasoning and baked, these chickpea skins are so flavorful and crunchy - one of my favorite parts!

    Seasoning swaps: While I love using the Everything but the Bagel Seasoning for this recipe, you can absolutely swap that seasoning for something else. Montreal Steak Seasoning or a Powdered Ranch Dressing Seasoning would be really tasty but the swap options are endless!

    Storing instructions: Store your seasoned chickpeas in a sealed container in the refrigerator and enjoy within 3-5 days.

    Re-crisping leftovers: Overtime, the panko and seasoning will be come soft in the refrigerator. If you want to crisp up your leftovers, reheat the seasoned chickpeas in a pan on medium/medium-high heat with 1-2 tablespoons of oil and cook for about 3-5 minutes. Try not to overcook the chickpeas as they can become mealy in texture. After you take the chickpeas off the heat, they will develop more of that crispy texture as they cool.

    Seattle Coffee Tour & What to Order at Seattle's Top Cafes

    If you find yourself in Seattle, you have to go on a Seattle coffee tour! The city is practically bursting at the seems with amazing coffee shops and an excellent cup of coffee can be found on practically every block! Fully embrace the local coffee scene and grab an espresso at the local caffe (Italian for coffee). Road Dogs took me on a Seattle coffee tour a few weeks ago and I can't wait to share their top spots!

    Caffé Appassano

    Caffé Appassano is known for their in-house coffee roasting and as we arrived to the coffee shop, they were finishing the final step of the roasting process. Coffee roasters are like giant clothes dryers and the watchful Roast Master decides when to stop the roasting and what beans to combine and blend together. We were lucky enough to see the final step of the roasting process, where the roasted beans were blown up into the air for inspection and separation.

    WHAT TO ORDER: Caffé Appassano roasts their beans in-house, so you should order a coffee made from the freshest batch of roasted coffee beans! There is a pretty good chance those beans you are about to enjoy were roasted just hours ago. If available, I would also highly recommend trying a white roast coffee (check out my explanation below!)

    Caffé Appassionato has a really beautiful ombre coffee bean display highlighting the variation of bean strengths and colors, starting from green coffee beans and ending with the darkest espresso roast. The rare white roast coffee bean (pictured above) is the first roast color transition when roasting green coffee beans. White roast beans have a light nutty flavor, are less acidic, and have less caffeine.

    The longer the coffee beans are roasted, the higher the sugar caramelization and consequent acidity. If you generally find coffee to be too acidic, opt for a lighter roast!     Caffé D'arte

    Known for their traditional Italian roasting technique, Caffé D'arte in Seattle roasts their beans over a wood burning fire. While modern day coffee roasting techniques have evolved from this primitive fire burning method, Caffé D'Arte embraces it! As one of the last coffee roasters in Seattle to use this ancient roasting technique, the coffee that they brew using the fire roasted beans has hints of smokey flavor.

    WHAT TO ORDER: You have to try a coffee made from the wood roasted coffee beans! The smokiness is truly a unique treat, giving you a taste of the old world Italian coffee roasting. Not all of Caffé D'arte coffee beans are roasted using the wood burning technique, so be sure to ask before you order.

    Caffé Umbria

    We ended our Seattle coffee tour with a very chique coffee shop. With multiple coffee shop locations in Seattle, Caffé Umbria is serving Italian-style espressos that are the ultimate afternoon pick-me-up. We enjoyed an espresso con panna, which is an espresso topped with house made whipped cream and came with a piece of chocolate. The best way to enjoy this espresso is to stir the whipped cream into the espresso and alternate between sips and bites of chocolate.

    WHAT TO ORDER: Espresso con panna (espresso topped with house-made whipped cream) is a delightful afternoon pick-me-up!

    Beecher's Mac & Cheese in Seattle, WA

    I've heard the rumors and yes, I can now confirm that Beecher's mac and cheese is the best mac and cheese in the world! Known for their specialty cheeses, Beecher's Handmade Cheese has a cafe in Seattle that's dishing out all things cheesy and I was lucky enough to snag a bite.

    Beecher's is so confident in their cheese, they are making it right in their storefront window! It's almost like they are daring you to come in and try a bite, showing off the fact that their natural cheese has nothing to hide. Beecher's only uses premium, natural ingredients and doesn't add any preservatives, colorings, or flavor enhancers.

    I came to Beecher's for their mac and cheese but I'd be lying if I said I wasn't tempted by their other cheese-centric menu items. I am sure they make an amazing tomato soup and grilled cheese but I can confidently say that Beecher's mac and cheese is something you have to try!

    Beecher's mac and cheese is unlike any mac and cheese I have ever had. Usually restaurants load up their mac and cheese with heavy ingredients and I can only take one bite before I've had enough. This dish on the other hand is creamy, silky, and full of flavor! I was delighted to see they swapped the classic elbow noodle for penne pasta and added a pinch of chipotle chili powder for a touch of heat. I finished my cup in 5 minutes flat, a new record for me!

    Apple Butter Vinaigrette Winter Kale Salad

    Gimme' all the kale, pomegranates, and apples - I seriously can't get enough of this delicious Winter produce. While throwing together this recent recipe creation, I really wanted to take this salad up a notch with an apple butter vinaigrette! Yes, an APPLE BUTTER VINAIGRETTE! This is one of my most flavorful and craveable salads yet. This healthy, make-ahead winter kale salad recipe is easy to throw together and is full of sweet and bold flavor. Now, let's get chopping!

    STEP 1: Prep and chop your kale, apples, and whole pecans. STEP 2: Whisk together all Apple Butter Vinaigrette dressing ingredients. STEP 3: Toss this Winter kale salad with dressing and load on the toppings. MAKE AHEAD: Refrigerate in an airtight container and enjoy within 24 hours.

    CHEF'S TIP: To soften raw kale, you first want to cut your bunch of kale into thin ribbons, which will help breakdown the tough texture. The next softening technique is to massage the kale with dressing. To massage kale, tightly grab bunches of dressed kale and squeeze handfuls to soften. Finally, the apple butter vinaigrette acidity will also help chemically breakdown and soften your kale.

    Ingredients

    Scale

    4 heaping cups of chopped kale

    1 thinly sliced apple

    ⅓ cup pomegranate seeds

    ¼ cup chopped pecans

    4 spoonfuls of apple butter

    For the Dressing:

    3 tablespoons olive oil

    1 tablespoon apple butter

    1 tablespoon apple cider vinegar

    1 teaspoon dijon mustard

    Pinch of salt

    Instructions

    1. In a small bowl, whisk together all dressing ingredients until well combined.
    2. In a larger bowl, toss the shredded kale, apple butter vinaigrette, half of the pomegranate seeds, and half of the chopped pecans together until evenly distributed.
    3. Top salad with remaining pomegranate seeds, chopped pecans, spoonfuls of apple butter, and apple slices.

    Notes

    1. Make Ahead: Store your fully dressed salad in an air-tight container and enjoy within 24 hours. Kale is extra hardy, so making this Apple Butter Vinaigrette Salad ahead of time won't make your salad soggy!

    January Happenings - New House, Girls Trip to Iceland & Precepting #RD2Be's

    Hello world! It's about time I posted something, don't you think? I feel like the holidays flew by and I can't believe January is almost over. How did this happen?

    To say I've had some pretty big distractions is an understatement. While I have been recipe testing, photographing, and traveling for the last two months, none of it has made it to the blog.. yet! I have two fully shot and tested recipes, two big trips (which will have to be broken down into multiple posts), ingredient guides, and so much more just waiting to be posted! So, let me break down the last few months into a few bite sized pieces.


    New House

    Mark and I are moving! ... in 6-8 months, haha. We are building our house from the ground up, which so far has been the craziest thing I have ever done. For the last year, we've been wanting to move but nothing on the market sparked our interest. We wanted to stay in the North Scottsdale area and pounced when we saw a new build community pop up. It was a dream come true!

    Because this house will be our 'forever home' we've been working hand-in-hand with a design team since early December to make sure we get every detail just right. We hired The LifeStyled Company to help us with all the design decisions, then spent 12 hours over three different appointments hand picking everything else with the builder. This new build has been pulling my head in a million different directions but I am excited about this next phase of our life! Now that most of the tough decisions have been made, we can sit back and wait for it to come together. We live about 15 minutes from our build site and saw that they broke ground the other day - we were overjoyed!

    Girls Trip to Iceland

    Don't worry, I have quite a few Iceland posts coming soon but I thought it would be fun to share some of the details now! I am the oldest of three girls and our 21st birthday family tradition is that my mom takes us on a one-on-one birthday trip to the city of our choice. My mom took me to New York City, my sister went to New Orleans (she's super into Jazz), and my youngest sister wanted to see the Northern Lights. My mom originally planned to take her to Alaska but after some research she realized that she would have better luck seeing them in Iceland. Once word spread to my middle sister and I that mom was taking Maurisa to Iceland, we begged to join them, and the rest is history!

    Precepting #RD2Be's

    As a registered dietitian nutritionist, I am now at the point in my career where I am able to mentor and teach the next generation of dietitians! To become a registered dietitian nutritionist, you have to have a college degree in dietetics, compete a full-time 9 month internship program, then sit for a national exam. The 9 month dietetic internship is basically really intense job shadowing. You are exposed to all different avenues of nutrition and at the end of the rotation are expected to be fully competent in that role.

    After being a dietitian for 2 years and running my blog for about 3 years, I am now taking dietetic interns from of a local dietetic internship program. As their entrepreneurship rotation, I show these future dietitians what it takes to run a food blog and everything that goes on behind the scenes. Being a mentor is really rewarding and I can't wait to show you what we have been working on!

    I am so excited to get back into the swing of things and hop back on line. Like I said, I can't believe February is almost over but am so excited about the road ahead!

    Mumbo Sauce in Washington, D.C.

    Do you Mumbo? This Washington, D.C. favorite turned my world upside down in 0.2 seconds. Mumbo Sauce is part sweet and sour, part urban legend, part ketchup, and unbelievably delicious! Every restaurant has their own version, with no two Mumbo Sauces alike. Philly has their cheesesteak, New Orleans has beignets, and D.C. is home of the Mumbo Sauce. This sauce is truly a local treasure, influenced by D.C.'s international culture with a BBQ sauce base and an Asian, Southern flare. If I had my way, I'd put Mumbo Sauce on everything!

    It's hard to describe its exact flavor but Mumbo Sauce has varying levels of sweet and tangy, with a vinegar kick, and a pinch of heat. The sauce I tried had a translucent golden red hue with specks of red pepper, all perfectly glazing my freshly fried wings. You can probably get away with putting this sauce on anything and everything but it's usually found at Chinese restaurants, accompanying a side of fries, and slathered on fried chicken wings (highly recommend!).

    The Mumbo Sauce wings I tried here were from Wingo's in Grover Park and I must say, they were the BEST wings I've ever had! I would describe these wings with this sauce as nothing less than euphoric. If you live in D.C., I am insanely jealous of your incredible sauce! If you are visiting D.C., you have to pop into the nearest restaurant and grab yourself some fries and wings with extra Mumbo Sauce on the side - it's an experience you can't miss when visiting!

    Semi-Homemade Pumpkin Pie Trifle

    You've just stumbled upon easiest thanksgiving recipe on the internet! This no-bake pumpkin pie trifle not only looks incredible, it takes a total of 15 minutes to prepare. To make this pumpkin trifle, all you need to do is deconstruct a store bought pumpkin pie and re-assemble it into a trifle, then whip up an easy allspice whipped cream.

    Adding a touch of allspice whipping cream makes this thanksgiving recipe feel less 'right out of the box' and adds flavor between the pie layers. This pumpkin trifle recipe is an easy and unique last minute dessert, perfect for a crow or Friendsgiving.

    Everyone loves a fun dessert but no one needs to know how easy it was to make! For this semi-homemade  pumpkin pie trifle, all you need to do is buy a pre-made pumpkin pie and separate the pie filling from the crust. Crumble the crust into small pieces and whip up some easy homemade allspice whipped cream and start your layers. Let me show you how!

    Chef's Note: Homemade whipped cream is ridiculously easy to whip up and is so much more flavorful than the store bought stuff. I like to whip mine up with an electric mixer but you can alway use a traditional hand and whisk! While plain whipped cream will always make me swoon, you can pump up the flavor by adding spices or extracts to the cream before mixing. Just add a little dash of something before mixing and you've got yourself a unique cream!

    Dietitian's Note: While you may not think a dessert like this would have some health benefits but think again! Pumpkin pies are made with pumpkin puree, which means real pumpkin (aka the good stuff). Pumpkin puree has some fiber and is also full of vitamin A, which helps our eyes and immune system. One slice of pumpkin pie gives you 91% of your daily need of Vitamin A, and that is something to celebrate! (Source)

    Cocktail Pairing: Dessert and coffee go hand in hand, especially after a full Thanksgiving meal. For this dessert, I would highly recommend a Baileys coffee, which will give you the perfect creamy evening pick me up!

    Ingredients

    Scale

    Store bought, ready-to-eat pumpkin pie

    1 cup heavy whipping cream

    2 tablespoons sugar

    ¼ teaspoon ground allspice

    Instructions

    1. Add the heavy whipping cream, sugar, and allspice to a large bowl and hand mix (about 10 minutes) with a whisk or an electric mixer (3-5 minutes) until the whipped cream forms. Set aside and keep chilled.
    2. Cut a slice from the ready-to-eat pumpkin pie, the size of the slice should match the size of your serving cup. Scoop out the pumpkin filling and set aside. Crumble the pie base and the crust with your hands, keeping the two in separate piles.
    3. Start building your pumpkin pie trifles. Your first layer will be a scoop of whipped cream, the next layer is the pumpkin pie bottom crust crumbles, then the pumpkin pie filling. Top with another layer of whipped cream and sprinkle the outer pie crust crumbles over the top. Enjoy!

    Notes

    Substitution: You can replace allspice with cinnamon if you would prefer.

    The whipped cream makes 1 and ½ cups.
